If you don't know what a caramel slice is, I'm sorry. Really, they're epic. Chocolate, gooey caramel, & cookie base. Think Twix bar but better. I fell in love with these bad boys when I was in Sydney and literally couldn't walk in to a coffee shop without buying one. So basically to say I had to avoid coffee shops after a while ¯\_(ツ)_/¯
But here's your chance to try one that's even better! Yeww. & I say better bc its:
~ vegan
~ gluten free
~ raw
~ refined sugar free
~ bullsh*t free
Yay!

RECIPE:
Ingredients:
Base:
1/4 cup ground walnuts
2 tbsp melted coconut Oil
1/2 cup Buckwheat groats lightly ground
1 tbs Chia seeds
1 1/2 tbsp Coconut Nectar (can sub w maple syrup)
2 tbsp hot water
Caramel Layer
1 1/2 cups dates (soaked in 1 cup warm water. Save the water!)
1 cup activated macadamia nuts (can sub cashews)
1 1/2 tbsp creamy tahini
1 tsp vanilla extract
1 tsp lucuma powder (optional)
1 tsp maca powder (optional)
Chocolate layer:
You can either buy dairy free chocolate & meltdown or:
4 tbsp coconut oil
1/2 raw cacao powder
HOW:
Mix together all base ingredients and pulse lightly in blender. Texture should be course & crunchy
Spread mixture into a thin layer on a cake pan or pie tin. Can also use muffin tin for individual minis!
Freeze base while prepping caramel.
Blend soaked dates and warm water with macadamia nuts, tahini, vanilla, & any fun powder you like until mixture is creamy & smooooth.
Spread layer over frozen base. Should be thick! Freeze while prepping chocolate.
Either melt down your chocolate of choice OR melt coconut oil in saucepan on super low heat & mix-in cacao powder. * Can add 1 tbsp of maple syrup if you want sweet*
Once oil is melted & mixed with cacao, take off heat and pour over caramel layer.
Leave in freezer for 2 hours until caramel layer is set but kinda creamy.
